Artisanal Avocado Toasts
The first time I had an artisanal avocado toast was at Slipstream on 14th Street in Washington, DC and immediately fell in love. It was simple yet delicious. Perfectly cut slices of avocado on wheat bread topped with whipped goat cheese (just pure decadence), salt, pepper, sprouts and then topped off with a drizzle of olive oil. A definite palate pleaser.
So, I became inspired and decided to create my own artisanal avocado toast ...
I knew that I wanted to add two of my favorite proteins - eggs and cheese - and then went from there. Using a ripe avocado, I spooned out the high in fiber fruit into a bowl, added two drops of champagne vinegar (this preserves its color and freshness) and mashed it up. After that, I toasted a slice of bread and then started to make a poached egg (thanks to my father and late grandmother who taught me at an early age). Once that was done, I buttered the toast, then added the avocado spread, the poached egg which was seasoned with salt, pepper and lastly topped it off with parmesan shavings.
Et voilà!
It was easy and extremely tasty. Since it took only 20 minutes to make, this is a great dish to make after a long day at work. The only ingredient I would add to this toast next time would be fried pancetta cubes or bacon.
